WELCOME TO MAMA’S MINUTE….TV Shoot 03-19-09

1. HAVING A LARGE DINNER PARTY? HERE’S AN INEXPENSIVE TASTY 1. DISH TO WOW YOUR GUESTS WITH.
APRICOT CHICKEN (FEEDS 12)

• 3 CHICKENS CUT INTO PIECES
• PLACE IN LARGE CASSEROLE DISH

SAUCE :
• 1/2 CUP MAYO
• 1 CUP APRICOT PRESERVES
• 1/4 SMJ CHILI PEPPER PASTE WITH
1/4 CUP WATER
• 1 PACKAGE DRY ONION SOUP MIX

MIX ALL TOGETHER
BRUSH SAUCE ALL OVER CHICKEN
NO OTHER SEASONING NECESSARY

BAKE AT 375? FOR AN HOUR & 20 MINUTES OR UNTIL DONE.
SERVE WITH COCONUT RICE.

2. SOMETIMES PEOPLE ARE CONFUSED ABOUT WHAT TO DO WITH OKRA?HERE’S A SIMPLE AFFORDABLE EASY SIDE DISH WITH LOTS OF FLAVOR.

• 1 CAN CUT OKRA
• 1 LARGE TOMATO, CHOPPED
• 1 LARGE ONION, SLICED
• 1 TSP GRANULATED GARLIC
• 3 CUPS COOKED RICE
• SALT & PEPPER TO TASTE
• OIL FOR FRYING VEGGIES

SAUTE ONIONS & TOMATOES UNTIL ONIONS TURN CLEAR
ADD GRANULATED GARLIC
ADD CAN OF OKRA UNDRAINED
SIMMER ON LOW FLAME UNTIL HEATED THRU, STIRRING OFTEN.
ADD COOKED RICE
STIR UNTIL HEATED THRU

SERVE HOT WITH YOUR FAVORITE ENTRÉE.
THE COOP HAS ALL QUALITY & ORGANIC INGREDIENTS NEEDED.


3. EVERYONE LOVES PORK. HERE IS ONE OF MY SIMPLE RECIPES.
PORK CREOLE


• FRESH PORK ROAST
• 1 ONION, SLICED
• 1 BELL PEPPER, SLICED
• 4 STALKS CELERY, SLICED
• 10 GLOVES GARLIC, SLICED
• 2 TOMATOES, CUT IN PIECES
• 4 CUPS CHICKEN BROTH
• 1 T THYME

TRIM FAT, ETC. CUT PORK INTO BITE SIZE PIECES SEASON MEAT W/S&P, DUST LIGHTLY W/FLOUR. LIGHTLY BROWN IN DUTCH OVEN WITH ¼ CUP OIL, ADD MORE WHEN NEEDED.
TOP WITH VEGETABLES
ADD BROTH

SIMMER COVERED ON LOW HEAT UNTIL FORK TENDER
OR
BAKE COVERED IN OVEN AT 375? APPROX. 1 HOUR OR UNTIL DONE.


4. WHILE DIGGING UP PURPLE POTATOES IN MY GARDEN I CAME UP W/ THIS NEW POTATO CASSEROLE
• 8-10 ASSORTED NEW POTATOES THINLY SLICED
• ONIONS SLICED
• FRESH SPINACH
•SOY MARGARINE OR BUTTER
•CHEESE
•2 CANS CONDENSED CREAM SOUP (YOUR CHOICE)
DILUTED WITH 1 CUP MILK
•BREAD CRUMBS

ALTERANTE LAYERS OF POTATOES, ONIONS & FRESH SPINACH
DOTTING EACH LAYER WITH MARGARINE OR BUTTER, CHEESE & BREAD CRUMBS.
POUR SOUP OVER POTATOES, TOP WITH CHEESE AND BREAD CRUMBS.

FOR VEGANS SUBSTITUTE WITH SOY CHEESE AND SOY MILK.
COVER, BAKE AT 375? FOR AN HOUR & 30 MINUTES OR UNTIL DONE.

1. Chili Pepper Butter

1 stick (1/2 cup) butter softened
2 Tablespoons Chili Pepper Paste
Butter – cream until soft, add Chili Pepper Paste.
Mix until smooth.
Put into a crock and chill 8 hours or up to 2 weeks. Can be frozen.


Chili Pepper Lime Dressing

1-cup mayonnaise
3 teaspoons lime juice
½ cup of marjoram or thyme
2 Tablespoons Chili Pepper Paste


2. Collard Green Slaw

¾ cup white wine vinegar
¼ cup extra-virgin olive oil
1 Tablespoon sugar
1 Tablespoon dry mustard
1 Tablespoon celery seeds
2 teaspoons sweet Hungarian paprika

2 large bunches collard greens (about 2 pounds), thick stems trimmed, leaves halved lengthwise, then thinly sliced crosswise (about 16 cups)
8 cups thinly sliced Napa cabbage (about 1 medium head)
4 cups coarsely grated peeled carrots (about 6 large)

Whisk first 6 ingredients in small bowl to blend. Season to taste with salt and pepper. (Dressing can be made 1 day ahead. Cover and refrigerate.)
Combine collard greens, cabbage and carrots in very large bowl. Pour dressing over; toss to coat.
Season generously with salt and pepper.
Refrigerate until collard greens soften and wilt slightly, tossing occasionally, at least 1 hour and up to 3 hours.

3. Iceberg Wedges with Creamy Feta Dressing


1-cup mayonnaise
4 ounces Feta cheese, crumbled (about ¾ cup)
½ cup plain nonfat yogurt
¼ cup buttermilk
3 Tablespoons white wine vinegar
Freshly cracked black pepper
2 large heads of iceberg lettuce, each cut into quarters
2 green onions, chopped

Whisk mayonnaise, ½ cup Feta cheese, yogurt, buttermilk and vinegar in medium bowl until almost smooth. Mix in remaining Feta cheese. Season dressing generously with cracked black pepper.
(Can be made 1 week ahead. Cover and refrigerate.)
Arrange lettuce wedges on 8 plates. Spoon dressing over lettuce. Sprinkle with green onions and additional cracked black pepper and serve.


Stuffed Lettuce Salad

Mix softened cream cheese with Sticky Love Sauce.
Stuff in between leaves of lettuce wedges.


4. Scarlet Lady Sour Cream Sauce

Cooked noodles

Mix Chili Pepper Paste w/sour cream, granulated onion and small amount of oil (of your choice).
Toss with cooked noodles until well coated.
Garnish w/parsley or green onion.


5 Soul Q Sauce Barbecue Pork & Beans
(Serves 6)
For those moms whose kids like pork & beans or for those grown-ups who like pork & beans and have little or no cooking skills, this is a great recipe.
2 cans or 1 large can of Pork & Beans
3 Tablespoons brown sugar
2 Tablespoons of Soul Q Sauce
1 lb ground meat (pork)
Salt & pepper to taste

Browned and drained meat, sprinkle w/brown sugar & Soul Q Sauce over meat. Add cans of pork & beans, salt & pepper. Stir, cover and let simmer on low flame about 10 to 15 minutes at 350?.

6. Soy Gin Salad Dressing

1/3-cup mayo
1/3-cup plain yogurt
3 Tablespoons Soy Gin Sauce
Stir to blend (Do not beat mix)

Mix Soy Gin Sauce w/canola oil or light olive oil for a “Got your attention” overall dressing for pasta, steamed potatoes, cooked rice and steamed veggies.
Soy Gin Dip & Spread
Mix Soy Gin with mayonnaise to use as a dip or spreading sauce over grilled or BBQ Salmon.
Cooked hot rice
Soy Gin Sauce
Marjoram
Oil
Green onion

Cooked rice: while still hot toss with ½ teaspoon marjoram, vegetable oil, chopped green onions and Soy Gin Sauce.
